How to make artichoke salad with rice
Artichoke or artichoke salad is one of the distinctive salads in its shape, wonderful taste and nutritious ingredients with a delicious dressing of olive oil, lemon juice and vinegar, served warm or cold.

Ingredients
½ cup basmati rice
Juice of 1 lemon
1 tablespoon vinegar
1 teaspoon salt
½ cup olive oil
2 artichoke tablets
5 green onions, chopped
Bunch of chopped parsley
½ bunch of minced fresh mint
3 tablespoons sliced green olives
Chopped dill for garnish
How to prepare
Wash basmati rice with water until we get rid of the starch in it and soak it for about a quarter of an hour.
Boil water in a saucepan and add a pinch of salt, then filter the rice and add it to the boiling water and leave it for about ten minutes.
In a bowl, mix lemon juice, vinegar, and olive oil and stir well.
Cut the artichokes into thin slices and put them on top of the previous mixture, stir and then drain the rice, add it and mix well.
Add green onions, parsley, mint and sliced olives, stir well, then put the salad in the fridge.
Put the salad in a serving dish and decorate with chopped dill. The salad can be served warm or cold, according to taste.
